Recipe: Zucchini Pasta

​​​​​Serves 4

Make vegetables fun for kids with this zucchini pasta recipe—it's all the rage these days!

Active time: 10 minutes
Total time: 15 minutes

Kitchen Gear:

  • Measuring spoons

  • Sharp knife or spiralizer

  • Cutting board

  • Medium skillet

Ingredients:

  • 2 teaspoons olive oil

  • 2 tablespoons water

  • 2 zucchinis, cut in very thin strips

  • Pinch salt

  • Finely grated Parmesan cheese

Instructions:

  1. Place a medium skillet over high heat. When it is hot, carefully add the olive oil and water.

  2. Add the zucchini and cook, stirring occasionally, until the zucchini is tender and golden,

  3. about 5 minutes.

  4. Serve right away, sprinkled with salt and Parmesan cheese.

Personalize It:

  • Make your own tomato sauce.

  • Make your own pesto.

Kids in the Kitc​hen:

  • Carefully allow your child to cut the zucchini into thin strips using the spiralizer.

  • Or, use a peeler!

  • Let your child mix the zucchini while it's cooking in the skillet.

  • Have your child choose and taste different cheese toppings.
